breezy monsoons....hot n spicy vaangi bharit(baigan ka bharta)

Hi…everyone…

It’s the weekend and the monsoons are here. The weather seems to be quite romantic.
And the foodie in me gets inspired to cook something sizzling in this weather.
Talking of the rains and monsoon this reminds me of my recent visit to sinhagarh,Pune.

the weather was awesome. at one point we felt like we are between the clouds..The wind was cool,it sometimes rained and sometimes was misty…















There is lots to see there but my favorite was the wind point. The wind was


blowing at a speed such that it may fly us down. It was a beautiful feeling,

 standing in the full forced wind and looking at the awesome sight.


                               
You will be surprised that everything from a bisleri water to coke,
 ciggrate,kulfis ,ice-cream etc..Each and every thing the vendors carry to the
 garh(fort) at such height by walking…so that explains the cost which are almost double of these items. Also you will find corns(bhuttas),kairi(raw green mango),berries etc like authentic local items. And believe me,when you are traveling you should indulge and enjoy the local flavors.

After the sightseeing it was time for great feast.high up onthe garh(fort) there are no restaurants or eating joints. There are only near by villagers who come up at the fort, cook freash hot and steaming meal for you
and that too at a very reasonable rate.









We were quite hungry at that point of time.and the food which was served was so authentic.it was typical Marathi platter, like;


Vaangi bharit,pithala,bhakar,dahi and thecha(a paste of garlic and green chilies).
The weather was cold and food was so hot and deliciously tasty. How can I forget


The garam bhajiyas….ummmm lovely.




I liked the whole food but there I tasted the vaangi bharit(baigan ka bharta)
Of typical marathwada style. my husband  missed this visit due to his official meeting..And I wanted to make it for him.


After I returned home I tried my hand…and yesssss my attempt was successful.


So guys I want to share my recipe with you.




Kolhapuri vaangi bharit:




Ingredients:


1) 1 bringal large(bharte ka baingan)


2) 2 medium onions chopped


3) 1 large tomato


4) 5-6 garlic cloves finely chooped


5) 2 green chilles(slit)


6) 2-3 tablespoon ground nut powder (coarse)


7) Oil 2 table spoon


8) Cumin seeds 1 tspn


9) Turmeric powder 1 tspn


10) Chili powder 1 tspn


11) Dhania (coriander)powder 1 tspn


12) Garam masala 1 tspn


13) Salt according to taste


14) Sugar 1tspn and limejuice(optional)


15) Coriander to garnish




Method:


1) Roast the bringal as a whole until cooked properly from all sides. Let it cool. Peel it and mash it so that no lumps remain. Keep aside.






2) Take fry pan and heat oil in it. Add cumin seeds. Then add the green chilies.






3) Now add chopped garlic and fry till turns golden brown.






4) Add chopped onion and stir fry till translucent.






5) And the mashed bringal, turmeric, chille and dhania powder. stir fry and mix properly. add tomato and stir fry.






6) Now add the groundnut powder, garam masala and salt.






7) Keep stirring for some time on flame.






8) Garnish with freash coriander leaves and serve hot with chapattis or bhakar.






Tip: kolhapuri recipes are hot and spicy. You can adjust the chili according to your taste.


If you want bit tangy taste you can add lime juice and sugar at the end of preparation and stir fry for 2 mins.






My husband, pradip loved the new variation of good old baigan bharta..and I hope you guys try it and like it too.
